Letting the flavours sit

I quite like making mincemeat, I am not a domestic goddess as my family will testify but this job I like. I like the colours and especially the smell as I am preparing it. I could easily buy it, but it gladdens my heart to make it. Except this year, I was a little daunted by the recipe which said I should have made it a month ago for the flavours to mature.
I am going to make it anyway, and we will just have to have young, immature, mince pies - but I take the point about preparation and letting things sit. For Advent is a time of waiting, of letting things sit, as we are matured and  made ready for Christ's return.
